  • 12oz (250g) Deli Meat, lots of it
  • pinch of Pepper
  • 3oz (80g) Mozzarella, sliced or shredded
  • 1 Jalapeño (optional)
  • 1 Egg, eggwash
  • 3oz (80g) Shiitake Mushrooms
  1. Make the dough from my Easy Pizza Dough recipe and slice it in 4 equal parts.
  2. Roll each piece of dough into a ¼ inch (½ cm) thick disc
  3. Add your ingredients but not too close to the edge so you can properly seal the calzone before baking.
  4. Preheat your oven to 500° F / 260° C.
  5. Wash your calzones with some eggwash and bake for 10 to 15 minutes or until golden brown. You need to watch it like a hawk though :).
  6. Enjoy!
